Pigato is derived from the Ligurian term for freckles, but being a soldier only gives you wrinkles.

Pigato grapes are similar to vermentino used in white wines and the pomace from this variety produces an aromatic grappa that is delicate and elegant. The finish can be peachy unless you've just finished snacking on some capocollo.
